VEGAN SAUSAGE ROLL

INGREDIENTS Scratch Swaps*
8 vegan sausages Meat alternatives
1 roll of vegan puff pastry Puff pastry
3/4 jar of Rubies in the Rubble Chilli Onion Relish
1 tablespoon of soy sauce
1 tablespoon of maple syrup Honey, agave or golden syrup
Sesame seeds Poppy seeds
Rubies in the Rubble Tomato Ketchup

METHOD

1. Preheat oven to 180°c and line two baking trays with parchment paper.

2. Remove the skins from the sausages should they have them and place the sausage ‘meat’ into a bowl. Mash the sausages up.

3. Roll out the sheet of puff pastry and cut in half along the long side.

4. Place the sausage ‘meat’ along one of the long sides with a 0.5cm gap at the edge.

5. Next add the Rubies in the Rubble Chilli Onion Relish on top of the sausage and then carefully fold the pastry over the top.

6. Use a fork to seal the edges and then cut into singular sausage rolls. Carefully score some lines on the top.

7. Now place them on the baking tray, and in a small bowl combine the soy sauce and maple syrup. Brush this over the rolls and then garnish with sesame seeds.

8. Bake in the oven for 20-25 minutes. Allow to cool slightly before devouring with Rubies in the Rubble Tomato ketchup.
