4 slices of white bloomer bread | Any bread or roll |
Rubies in the Rubble Plain Mayo | Rubies in the Rubble Garlic Mayo |
Handful of fresh rocket | Salad of choice |
1/8 red cabbage, thinly sliced | |
1 teaspoon of olive oil | |
150g vegan cooked soy/chik’n pieces | Chicken pieces, leftover meat |
60g vegan sage and onion stuffing mix | Leftover stuffing |
6 rashers of vegan bacon | Leftover pork or pork substitute |

1. Begin my preheating oven to 180°c and then covering the stuffing mix in 220ml boiling water.
2. Allow to sit for 5 minutes before spreading the stuffing on a baking tray and placing in the oven for 25 minutes or as per instructions.
3. Meanwhile add the olive oil to a pan on a low heat along with the sliced red cabbage. Season with salt and allow to sauté for 15-20 minutes stirring frequently.
4. Cook the bacon rashers to instructions and heat the soy pieces should you wish.
5. Next toast the bread should you desire and smother two of the slices with Rubies mayonnaise. Add the fresh rocket on top, along with the sauteed red cabbage.
6. Add the soy pieces, then cooked stuffing and bacon slices.
7. Top with your Rubies in the Rubble chutney of choice and add the remaining slices on top. Slice and enjoy!
