SPICED BEETROOT, FETA & SMOKEY WEDGES

The most delicious dish to use up ketchup bottle dregs.

Sometimes, no matter how hard you shake and slap your ketchup bottle, a few precious remains still cling to the inside

Luckily, we’ve got a GENIUS way to use up the dregs on these smoky wedges. And it pairs perfectly with our food-waste-fighting Raspberry Sour collab with Toast Ale.

INGREDIENTS Scratch Swaps*
For beetroot salad
2 garlic cloves
1 tsp cumin seeds
1 green chilli Dried chilli flakes
Good glug of olive oil
1⁄2 tsp garam masala
1⁄2 tsp aleppo powder
Small bunch coriander Parsley
100g feta cheese Vegan substitute or halloumi
Cooked beetroot Or roast your own
For wedges
2 baking potatoes Sweet potatoes
1 garlic clove
Rubies in the Rubble Tomato Ketchup Your dunk of choice
Olive oil Sunflower, vegetable, avocado, rapeseed oil
2 tsp smoked paprika Cayenne pepper (use less)

METHOD

For the beetroot salad

1. In a frying pan gently fry your garlic and spices in olive oil.

2. Muddle the beetroot through the oil, plate up, scatter over feta and coriander to finish.

For the wedges
1. Cut your potato into wedges, pop into boiling water for 3-4 mins drain and allow to steam.

2. Add chopped garlic cloves and a glug of olive oil to the dregs of your Rubies in the Rubble Ketchup bottle. Shake well and add to coat the wedges.

3. Slide into a hot over 180-200°c until caramelised and roasted.

4. Finish with a sprinkling of smoked paprika.

5. Serve with a healthy amount of Rubies in the Rubble Tomato ketchup and some flatbreads to mop up the sauces.
