Smooth, creamy and garlicky mayo made with aquafaba as a plant-based substitute for eggs so that vegans can enjoy it too! Aquafaba is the nutrient-rich water left over from cooking chickpeas which would normally be thrown away.

The surplus ingredient in our mayo is Aquafaba. We work in partnership with a hummus manufacturer in Cardiff to collect up all of the leftover water from their cooked chickpeas

This delicious and creamy mayo is made from aquafaba which is the common name for the cooking liquid of beans and other legumes like chickpeas. You may know it as the typically discarded liquid found in cans of chickpeas, or as the liquid left over from cooking your own.
Our mission at Rubies is to make sure that no good food goes to waste, which is why we work with hummus manufacturers to collect their surplus aquafaba which is typically thrown away.
Add a drizzle of oil, some roasted garlic and a squeeze of lemon and you've got the makings of a delicious jar of Rubies plant-based mayo, ready for some serious crust dunking!
