Sweetcorn fritters

Jo's midweek perk-me-up meal!
Sweetcorn fritters, a wonderfully simple midweek meal - add a poached egg and some Top Banana ketchup and it gets interesting. It'll perk you up on a hump day and make you feel a Top Banana!
Serves 3:

- small can of sweetcorn (normally 198g, randomly), drained

- 2 spring onions, finely chopped

- 1 tsp smoked paprika

- 100g self-raising flour

- 1 beaten egg, 3 eggs for poaching

- 100ml milk

- 1 lime

- coriander

- glug of oil


  1. Mix the sweetcorn, spring onions, paprika, coriander, flour, beaten egg, coriander, milk and some seasoning in a large bowl and set aside.
  2. Heat the oil in a large, non-stick pan and spoon in four burger-sized mounds of the fritter mixture, spaced apart (you may need to do this in two batches). When brown on the underside, turn over and cook for 3 mins more until golden.
  3. Meanwhile, poach the eggs in the simmering water for 2-3 mins until cooked and the yolks are runny. Remove with a slotted spoon. Serve the fritters topped with a poached egg, wilted greens, squeeze of lime and a dipping dollop of Top Bananaaaaa!
